We will then drive through the breathtaking Quebrada de las Conchas, formed about 50 million years ago. This quebrada, or canyon, has intense colours and spectacular geological formations formed by the concentration of different minerals in the soil. We will stop at different points to observe the rock formations and how the light changes them throughout the day.
After leaving the canyon, we will enter the Calchaquí Valleys, a region that was of economic importance during the colonial era (after the 1600s) for its cattle breeding and the production of spices, grains and wine, some of which was taken by mule as far away as the Atacama Desert in Chile.

We will first pass by a very old water mill that local families have used to mill their grains. Even though it’s not at use today, the local family is very proud of this heritage.
After a quick hi, we will continue up to the Antigal, the pre Spanish ruins.
The Calchaqui Valleys have been inhabited since 5000 bc. It is one of the most diverse cultural mosaics of Salts. Here we will learn of long gone away times, of stories of brave men defending their land and of all the natural medicine they still use today.
After having some drinks, we will return on the same path.
In the afternoon, visit a distillery to learn how our staple and spirits are made as well as other types of Distilled. This is the only distillery of the Calchaqui Valleys and also here you will be able to sample the 4 different types of grappa: with ruda (a typical witchcraft herb also used in celebrations), aji kitucho (a very heavy chili), locoto (also another chili pepper from Bolivia) and Coca (the famous coca leaves). High-altitude wines have become the latest thing in New World wines. The winemaking process combines the extreme temperatures and sun exposure to the grapes along with the poor soil to make full-bodied, high quality reds and fruity aromatic whites in small quantities.
After the visit, we will go to a few other vineyards and wineries and have lunch.
We will return to the hotel in the afternoon.
After some relax time, we will leave Cafayate, driving north on Route 40, a famed road that runs the length of the Andes from northern Argentina to the far south.
It will take 30 minutes to reach the town of San Carlos, home to one of the largest churches in the valley and many well-preserved colonial-style houses.
In San Carlos, Fernanda and Javier, a local ceramist couple, will receive us.
They started their business a few years ago, and they like to open the doors of their workshop and home to welcome tourists who are interested in the ancient art of pottery.
They will teach us the ancient method of using a coil of clay to build a huge vase to hold water — all by hand. Or they will lend us their wheel so that we can throw a pot by centering clay and making a piece of pottery. They will also show us how to decorate and fire a piece. They have a shop where they sell their pottery; they also sell to restaurants and handicraft markets in the area.
